About Froth

Here’s what I learned today about froth from a great book “On Food and Cooking”
Froth or foam has many uses beyond just looking cool…
First, milk and milk products have the tendency to create a skin on the top layer. This froth keeps the top from creating that layer of skin which looks like it’s been sitting.

Also, these bubbles act as an insulator for the beverage! Think about it – Air is an excellent insulator. The bubbles are air bubbles on top, keeping the fresh moving air from touching the liquid itself. This makes sense! Same reason your puffy jackets are so warm! Also, this keeps it warm by preventing evaporation on the liquid – which would make it cooler too.
